Lemon Gem Miniature Cakes - cooking recipe

Ingredients
    1 (2 layer) pkg. lemon cake mix
    1 (1 lb.) pkg. confectioners sugar
    juice and grated rind of 3 lemons
Preparation
    Prepare cake batter using package directions.
    Spoon by teaspoonfuls into greased and floured miniature muffin cups.
    Bake at 350\u00b0 for 10 minutes or until light brown.
    Combine confectioners sugar, lemon juice and rind in small bowl; stir until sugar dissolves.
    Place wire racks over waxed paper.
    Dip hot miniature cakes in glaze.
    Place on wire racks to cool completely.
    Yield:
    96 servings.
