Tex-Mex Stuffed Potatoes - cooking recipe
Ingredients

6 large baking potatoes
1/2 lb. lean ground beef
1 onion, chopped
1 garlic clove, minced
1 (16 oz.) refried beans
1 (8 oz.) Mexican salsa
dash of pepper
8 oz. sour cream
2 Tbsp. chopped green onions
2 Tbsp. chopped tomatoes
corn or tortilla chips (for garnish)
Preparation

Bake potatoes at 400\u00b0 for 1 hour. In a medium saucepan, brown beef, onion and garlic. Drain fat. Add beans, salsa and pepper. Simmer, stirring occasionally, 40 minutes or until thickened. Cut an X in top of each potato. Fluff potato with fork and spoon beef mixture over each potato. Garnish with sour cream. Sprinkle with green onion and tomato. Serve with chips.
