Pot Roast And Veggies - cooking recipe

Ingredients
    1 1/2 to 2 lb. beef roast
    1 or 2 pkg. (envelopes) onion soup mix (depends on the size of the roast)
    5 to 6 medium potatoes, sliced, quartered or cubed
    1 to 2 cut carrots
    water
Preparation
    Brown meat in skillet.
    Place roast in bottom of a large pan and pour in enough water to cover meat well.
    Stir in soup.
    Bring to boil.
    Reduce heat and simmer with lid on.
    Cook 2 to 3 hours total.
    (Add water as necessary to keep meat and veggies covered.) About 3/4 hour before meat is done, add potatoes and carrots and continue to simmer.
