Diabetic Jelly - cooking recipe

Ingredients
    1 Tbsp. lemon juice
    1 tsp. unflavored gelatin
    1 tsp. cornstarch
    dash of salt (optional)
    1 c. unsweetened fruit juice (any flavor)
    sweetener to equal 1 c. sugar
Preparation
    Combine all ingredients in a saucepan (except sweetener) ; bring to a boil for 2 minutes, stirring constantly.
    Add sweetener.
    Pour in jar and store in refrigerator.
    Yields 1 cup.
