Country Coleslaw - cooking recipe

Ingredients
    1 large head cabbage
    salt
    water
    1/4 c. vinegar
    1/4 c. oil
    1/4 c. lemon juice
    1/2 c. sugar
    1 bunch parsley, chopped
    3 carrots, grated
    2 c. mayonnaise
Preparation
    Shred the cabbage.
    Sprinkle generously with salt; cover with water.
    Let stand several hours.
    Drain water; add next 5 ingredients.
    Mix well; let stand several more hours.
    Drain again; refrigerate until ready to serve.
    Just before serving, add carrots and mayonnaise.
    Serves 8 to 12.
