Black-Eyed Pea Salad - cooking recipe
Ingredients

1 c. dried black-eyed peas
1 small onion, minced
1/4 c. salad oil
2 tsp. vinegar
1/2 tsp. salt
1/4 tsp. pepper
Preparation

Soak peas overnight and rinse.
Cover with water and cook 30 minutes.
Drain; cover with water and cook 30 minutes more or until tender as you like it.
Drain well.
Mix with remaining ingredients and chill overnight.
Serves 4.
