Dr. Bowen'S Oatmeal Cookies(Adapted From The Diabetic Gourmet) - cooking recipe

Ingredients
    1 1/2 c. fork-stirred all-purpose flour
    2 tsp. baking powder
    1/2 tsp. salt
    2/3 c. margarine
    1 1/2 c. quick cooking oats
    1/2 c. sugar
    1 tsp. vanilla
    4 egg whites
    1/2 c. skim milk
    1/2 c. raisins
    1/2 c. chopped walnuts
Preparation
    On wax paper stir together flour, baking powder and salt.
    In a medium saucepan or metal bowl over low heat melt the margarine. Off heat stir in the oats, sugar and vanilla.
    In a small bowl beat the egg whites only until frothy; stir into the oats mixture. Stir in the flour mixture in 3 additions alternately with the milk, just until blended.
    Stir in the raisins and nuts.
    Drop by level tablespoonfuls a few inches apart onto lightly greased cookie sheets.
    Bake in a preheated 375\u00b0 oven until lightly browned on undersides, 10 to 12 minutes.
    Makes about 4 dozen.
