Shrimp Florentine - cooking recipe
Ingredients

4 pkg. chopped spinach, drained
2 lb. medium shrimp, peeled and cooked (3 1/2 lb. raw)
1/2 c. unsalted butter
1 medium onion, chopped
1/2 c. all-purpose flour
1 1/2 pt. half and half
1 c. dry white wine or water
2 tsp. paprika
salt and pepper to taste
8 oz. Cheddar cheese, grated
Preparation

Spray a 9 x 13 pan with Pam. Spread spinach over bottom of dish and layer shrimp over spinach. Saute onions with butter until onions are clear. Add flour, then gradually blend in half and half, stirring until thickened. Slowly stir in wine or water; add salt, pepper and paprika. Pour over shrimp; sprinkle with cheese. Bake, uncovered, 30 minutes at 325\u00b0. Allow to rest several minutes before serving.
