Spirited Chicken - cooking recipe

Ingredients
    1 (4 to 5 lb.) roaster
    4 to 6 Tbsp. olive oil
    1 Tbsp. crushed dried rosemary
    1 clove garlic, minced
    8 oz. red or white dinner wine
    1/2 c. chopped parsley
    2 oz. Scotch whiskey or rye or bourbon
    1 Tbsp. tomato paste
    salt and pepper
    1 small can mushrooms
Preparation
    Cut roaster in 8 pieces.
    Brown in deep kettle.
    Add seasonings.
    Brown 10 minutes on each side.
    When chicken is browned, remove fat and add the mixture of wine, whiskey and tomato paste.
    Add mushrooms and liquid from can.
    Simmer until tender. Do not cover pot.
    Add additional wine or water as needed.
    Turn chicken pieces once in a while.
    Serves 4. All alcohol evaporates. Diners are sober with this chicken.
