Dutch Pea Soup - cooking recipe

Ingredients
    1 lb. dried split peas
    9 c. cold water
    1 c. chopped onion
    1/2 c. chopped celery
    1/2 c. chopped carrots
    1 (8 oz.) ham hock
    1 bay leaf
    1/4 tsp. thyme
    2 tsp. salt
    1/2 tsp. pepper
Preparation
    Put all ingredients in a 4 to 6-quart pot and bring to boil. Reduce heat to low and simmer 2 1/2 to 3 hours.
    Remove meat from bone.
    Makes 8 cups of soup.
