Mint Caponata - cooking recipe

Ingredients
    1 large white onion
    1 large eggplant (skin on)
    1 medium yellow summer squash
    1 medium zucchini
    2 red peppers
    2 green peppers
    2 cloves garlic
    1 1/2 tsp. salt
    1 1/2 tsp. ground black pepper
    1 tsp. fresh oregano
    1 tsp. fresh basil
    1 (8 oz.) can whole Italian tomatoes (pastene)
    approximately 15 fresh mint leaves
Preparation
    Dice garlic.
    Rough chop all veggies.
    Mince fresh herbs, except mint.
