No Fat Apple Muffins - cooking recipe

Ingredients
    1 c. apple juice
    1/2 c. maple syrup
    1 Golden Delicious apple
    1/2 tsp. salt
    2 tsp. baking powder
    1/2 tsp. baking soda
    2 c. pastry flour
    canola oil or spray for pan
    1/2 c. roasted chopped almonds (optional)
Preparation
    Mix dry ingredients; set aside.
    Mix liquid ingredients. Combine both.
    Wash apple but do not peel.
    Cut into small pieces and remove seeds.
    Dice well.
    Mix into batter and add almonds, if desired.
    Use a nonstick muffin pan or a lightly sprayed pan. Fill muffin tins 3/4 full.
    Bake for 30 minutes at 375\u00b0.
