Catfish Chowder - cooking recipe
Ingredients

1 1/4 lb. salt pork, cut into 1/4 inch cubes
3 large onions, diced
3 lb. catfish, precooked in pressure cooker for 1 1/2 hours at 10 lb. pressure (to soften bones)
5 large potatoes, diced
3 c. boiling water or use broth from catfish
4 tsp. salt
4 c. fresh milk
1 c. evaporated milk
Preparation

Saute
pork in large skillet until lightly browned, add onions and
cook until just tender.
Stir in drained catfish, potatoes, water (or fish broth) and salt.
Cover and simmer 25 minutes, stirring
occasionally.
Stir in milk and evaporated milk;
heat until
just
hot.
Do not boil!
Serves 10 hearty appetites or 20 average appetites.
