Potato-Vegetable Salad - cooking recipe

Ingredients
    2 medium baked potatoes, refrigerated overnight
    1 bell pepper, diced or sweet yellow or orange
    1 cucumber, diced
    1 tomato, diced
    green onion, sliced (optional)
    1/2 c. black olives, sliced
    salt and pepper to taste
    Good Seasons dressing mix, made by directions on pkg.
Preparation
    In large bowl, peel and dice potatoes.
    Combine all other ingredients.
    Toss and serve.
