Banana Nut Bread Muffins - cooking recipe

Ingredients
    1/2 c. shortening (I use Crisco butter flavor sticks)
    1 c. sugar
    3 egg whites, lightly beaten with a fork
    1 tsp. soda
    2 c. flour
    1/4 c. sweet skim milk
    1 tsp. vanilla
    1/4 to 1/2 tsp. salt
    2 1/2 bananas, mashed
    1/2 c. chopped pecans
Preparation
    Cream shortening and sugar.
    Blend in remaining ingredients, adding bananas and nuts last.
    Pour mixture into muffin pan sprayed with no-stick.
    Bake at 350\u00b0
    for about 20 minutes.
    Use toothpick to test.
