Spicy Spud Chicken - cooking recipe

Ingredients
    1/3 c. butter, melted
    2/3 c. instant mashed potato flakes
    3 Tbsp. taco dry seasoning mix
    1/8 tsp. pepper (red)
    1/3 c. grated Parmesan cheese (shaker kind)
    1 (2 1/2 to 3 lb.) chicken, cut into 8 pieces
Preparation
    Preheat oven to 375\u00b0.
    Coat 9 x 13 baking dish with nonstick cooking spray.
    Place the melted butter in shallow dish. In a large bowl, combine the remaining ingredients except chicken.
    Dip chicken pieces into melted butter, then potato mixture, coating well. (I use gallon storage bag to shake it in.)
