Eggplant Dressing - cooking recipe

Ingredients
    4 c. cooked rice
    2 lb. ground chuck
    1 large eggplant, peeled and sliced
    1 medium onion, diced
    1/2 medium bell pepper, diced
    1 tsp. salt
    1 tsp. red pepper
    1 Tbsp. black pepper
    2 Tbsp. vegetable oil
Preparation
    Season ground chuck with salt and pepper.
    Saute meat and eggplant in oil on medium heat until done and moist.
    Add onion and bell pepper.
    Cook on low heat about 30 minutes.
    Add water, if needed.
    Add cooked rice.
    Cover; simmer on low heat for ten minutes.
    You may wish to add seasoning to adjust taste.
    Makes approximately 8 servings.
