Sfingi With Ricotta - cooking recipe
Ingredients

4 c. cake flour
pinch of salt
1 Tbsp. baking powder
3/4 to 1 c. sugar
1 1/2 lb. Ricotta cheese
4 eggs
2 Tbsp. vanilla
1/2 c. milk (if Ricotta is watery, don't add milk)
oil (for frying)
Preparation

In a large bowl, mix eggs sugar and Ricotta cheese until smooth and creamy.
Add vanilla and mix in flour, salt and baking powder.
Blend until flour is moist.
If batter is dry, add a little milk.
Drop by teaspoon into hot oil until golden.
You will find that the puffs, when they are done on the bottom, will turn themselves.
Otherwise, you can turn them.
Drain on brown paper bags to absorb oil.
Place in serving dish and add a sprinkle of granulated sugar.
This is a great dessert or snack to make in a hurry when you want something fast.
They are a perfect accompaniment to coffee.
