Breast Of Chicken Fiesta - cooking recipe
Ingredients

1 c. Cheddar cheese cracker crumbs
4 green onions, chopped
2 Tbsp. butter or margarine, melted
1 c. (4 oz.) shredded Cheddar cheese
1/2 tsp. chicken-flavored bouillon granules
2 Tbsp. taco seasoning mix
8 chicken breast halves, skinned and boned
2 c. half and half cream
1 c. (4 oz.) shredded Monterey Jack cheese
1 (4 oz.) can chopped green chilies, drained
vegetable cooking spray
Preparation

Combine cracker crumbs and seasoning mix, stirring well. Dredge chicken in crumb mixture.
Place in a 13 x 9 x 2-inch baking pan sprayed with vegetable cooking spray.
Saute green onions in butter in a skillet until tender.
Stir in cream and remaining ingredients.
Pour over chicken.
Bake, uncovered, at 350\u00b0 for 45 minutes.
Yields 8 servings.
