Funnel Cake - cooking recipe

Ingredients
    2 beaten eggs
    1 1/2 c. milk
    2 c. sifted all-purpose flour
    1 tsp. baking powder
    1/2 tsp. salt
    2 c. cooking oil
Preparation
    In mixing bowl combine eggs and milk.
    Sift together baking powder and salt.
    Add to egg mixture; beat smooth.
    If thick add milk. If too thin, add flour.
    Heat oil to 360\u00b0. Pour 1/2 cup batter into funnel or measuring cup.
    Release batter into the oil in a swirling pattern.
    Cook for 3 minutes.
    Turn and cook 1 more minute.
    Drain and sprinkle with confectioners sugar.
    Makes approximately eight 4-inch cakes.
