Carrot Pie - cooking recipe
Ingredients

2 1/2 c. sliced carrots (about 1 lb.), cooked and drained
1/2 c. sugar
1 tsp. salt
1/2 tsp. ginger
1 3/4 c. milk
1 unbaked 9-inch pie shell
1 egg
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Preparation

Beat together cooked carrots, egg, salt, cinnamon, ginger, nutmeg and milk smooth, using mixer, food processor or blender. Pour into pie shell and bake in preheated 450\u00b0 oven for 10 minutes.
Reduce heat to 300\u00b0 and bake an additional 50 minutes or until filling is firm.
Cool on rack. Garnish with whipped topping, if desired.
