Chicken Cacciatore - cooking recipe

Ingredients
    1/4 c. olive oil
    2 1/2 to 3 lb. fryer chicken (I use boneless breasts, cut up)
    2 medium onions, cut up
    2 cloves garlic, minced
    1 lb. can tomatoes (2 c.)
    1 (8 oz.) can tomato sauce
    1 tsp. salt
    1/4 tsp. pepper
    1 tsp. oregano or basil
Preparation
    Heat olive oil in skillet. Add chicken pieces, browning slowly, turning once.
    Remove chicken from skillet. Cook onions and garlic in oil until tender, but not brown.
    Combine remaining ingredients, except cooking wine. Return chicken to skillet and sauce mixture. Cover and simmer 45 minutes.
    Stir in cooking wine. Cook, uncovered, for 20 minutes more turning chicken occasionally. Serve with well buttered noodles or spaghetti sprinkled with Parmesan cheese.
