Horseradish Relish - cooking recipe
Ingredients

2 c. (about 3/4 lb.) grated horseradish
1 c. vinegar (white)
1/2 tsp. salt
Preparation

Wash horseradish roots thoroughly and remove the brown outer skin.
(A vegetable peeler is useful in removal of outer skin.) The roos may be grated or cut into small cubes and put through a food chopper or a blender.
Combine ingredients.
Pack into clean jars.
Seal tightly.
Store in refrigerator.
Yields 2 jars (1/2 pint each).
