Fresh Peach Chutney - cooking recipe

Ingredients
    3 c. fresh peaches cut into 1/2 inch cubes
    2/3 c. EACH chopped onion, golden raisins and sugar
    1/2 cup cider vinegar
    2 Tbsp. fresh ginger root, peeled and grated
    1 cinnamon stick, break in half
    1/2 tsp. EACH salt & pepper
    1/4 tsp. EACH nutmeg and allspice
Preparation
    In a medium saucepan combine all ingredients. Bring to a boil, stir to dissolve sugar. Reduce heat to low, simmer, uncovered, stir once in a while, for 45 minutes or until chutney is thick and most of the liquid is gone. Remove from heat. Makes 1 1/2 pts. Process as for canning or refrigerate.
