Ingredients

3/4 c. sugar
1/4 c. all-purpose flour
dash of salt
3 Tbsp. butter or oleo, melted
1 tsp. finely shredded lemon peel
1/4 c. lemon juice
3 eggs, divided
1 1/2 c. milk
Preparation

In a mixing bowl, combine sugar, flour and salt.
Stir in the melted butter, lemon peel and lemon juice.
In another bowl, beat egg yolks until well beaten.
Add milk to beaten yolks and stir together.
Pour yolk mixture into lemon mixture, mixing well. Beat egg whites until stiff peaks form.
Fold whites into the lemon mixture.
Pour batter into an ungreased 8 x 8 x 2-inch baking pan.
Place a 13 x 9 x 2-inch baking pan on oven rack; place the batter-filled pan in the 13 x 9 x 2-inch pan.
Carefully pour hot water into the larger pan to a depth of 1 inch.
Bake in 350\u00b0 oven for 40 minutes.
Serve warm or chilled in dessert dishes.
Serves 9.
