Beef Jambalaya - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 1/2 c. onion
    1/2 c. bell pepper
    1/2 c. green onion
    1/4 c. parsley
    1 c. diced tomatoes
    1 clove garlic
    1/4 tsp. dry mint
    1 1/2 c. rice
    salt to taste
    hot sauce to taste
    2 lb. smoked beef sausage
    1 1/2 c. water
Preparation
    Add oil to Dutch oven.
    Cook chopped onion and bell pepper to tender.
    Add water, rice, tomatoes and spices.
    Cube beef sausage. Add to Dutch oven.
    Cover with water.
    Simmer until water is almost gone.
