Puffy Eggplant Casserole - cooking recipe

Ingredients
    1/2 c. mushroom soup
    1/3 c. mayonnaise
    3/4 c. cracker crumbs
    1/3 stick melted butter
    1 egg
    1 c. sharp grated cheese
    small chopped onion
    1 large eggplant
    salt and pepper to taste
Preparation
    Peel eggplant and boil 5 minutes.
    Drain and season.
    Mash. Mix with all other ingredients.
    Put some of the crumbs in mixture.
    Put in 2-quart casserole dish.
    Sprinkle rest of crumbs on top.
    Dot with butter and bake 30 to 45 minutes at 350\u00b0.
