Ingredients

5 eggs
2 c. whole milk
2 1/2 Tbsp. flour (self-rising)
2 deep-dish pie crusts
2 c. sugar
1/4 tsp. salt
1 stick butter or margarine
6 oz. pkg. frozen coconut
1 tsp. vanilla
Preparation

Mix sugar, salt and flour together.
Add beaten eggs, milk, vanilla and coconut.
Melt butter and add to mixture.
Stir.
(Can refrigerate at this point.)
Pour into unbaked pie shells 2 deep-dish pie crusts.
Bake at 400\u00b0 for 10 minutes.
Reduce heat to 300\u00b0.
Cook until golden brown and set.
Let cool.
Makes 2 pies.
