Plum Good Pork(Serves Four) - cooking recipe

Ingredients
    1 to 1 1/2 lb. pork tenderloin
    1/4 c. dry red wine
    1/2 c. beef stock or chicken
    salt and pepper to taste
    6 to 8 fresh or canned plums
    1 large onion, sliced
    1 Tbsp. olive oil
Preparation
    Preheat electric skillet to 350\u00b0.
    Cut pork tenderloin 1/2 to 3/4-inch thick.
    Cut plums into halves.
    Add olive oil to pan. Saute pork and onion slices 3 to 6 minutes, or until done.
    Remove tenderloin and onions; drain excess oil.
    Deglaze pan with wine, stock and halved plums.
    Stir sauce until reduced to gravy-like consistency.
    Pour sauce over tenderloin and onions.
    Garnish serving plate with fresh fruit.
