Dirty Rice - cooking recipe

Ingredients
    5 lb. chicken giblets
    2 lb. ground beef
    2 lb. sausage
    2 c. green onions
    10 garlic cloves
    6 c. chopped onions
    3 c. chopped celery
    3 c. chopped bell peppers
    1/2 to 1 c. parsley
    2 Tbsp. poultry seasoning
    2 Tbsp. Worcestershire sauce
    2 Tbsp. Lou's Seasoning (recipe can be found in this book)
Preparation
    Boil giblets until tender; cool, then cut meat into small pieces.
    Brown ground meat and sausage.
    Drain off fat.
    Mix giblets and broth together; simmer.
    Then make a roux, using approximately 2 cups of oil and 10 tablespoons flour.
    Cook until dark brown.
    Add onions, celery, bell peppers and garlic; cook until tender, then add to meat and broth.
    Add seasoning and simmer.
    You may add more of Lou's Seasoning, if needed.
    May use chicken broth if not enough for rice.
    I use 16 cups of instant rice, having enough broth according to amount as directed to cook rice.
    May use regular rice.
