Cajun Skillet Hash - cooking recipe

Ingredients
    1 onion, chopped
    1 clove garlic, crushed
    2 Tbsp. margarine
    1 can potatoes, drained and chopped
    1 can Cajun or original style stewed tomatoes
    1/2 tsp. thyme, crushed
    2 c. chopped, cooked ham or turkey
    1 green pepper, chopped
Preparation
    In large skillet, cook onion and garlic in butter until tender-crisp.
    Add\tpotatoes
    and
    cook
    2\tminutes.
    Stir\tin tomatoes and thyme; simmer 2 to 3 minutes.\tAdd meat and green pepper.
    Season
    with
    salt
    and
    pepper
    to
    taste.
    Simmer, stirring frequently,
    3
    to 5 minutes.
    Season with hot pepper sauce, if
    desired.
    If
    using original style stewed tomatoes, add a pinch each of cinnamon, ground cloves and cayenne.
