Dad'S Apricot Chicken - cooking recipe
Ingredients

2 chicken breasts, halved
3 Tbsp. flour
1 tsp. paprika
1 to 2 Tbsp. vegetable oil
1/3 c. apricot preserves
1 (16 oz.) can apricot halves in light syrup
1 1/2 tsp. low sodium soy sauce
1 Tbsp. cooking sherry
1 1/2 tsp. brown sugar
2 scallions, sliced
1 tsp. lemon juice
Preparation

Remove skin and trim fat from chicken.
Dredge chicken in flour and paprika mixture.
Heat oil in skillet and brown chicken over medium heat.
Drain on paper towels.
