Chicken Piccata - cooking recipe

Ingredients
    4 chicken cutlets (1 lb.)
    salt and pepper as desired
    2 Tbsp. vegetable oil
    2 Tbsp. margarine
    1/2 c. chicken broth
    1/3 c. fresh lemon juice
    1/4 c. chopped fresh parsley
Preparation
    Purchase chicken cutlets, or prepare them yourself by skinning and boning chicken breasts.
    One whole breast yields 2 cutlets. Cutlets must be pounded until thin (approximately 1/4-inch).
    Use the flat side of a meat pounder, cleaver or large knife.
    Sprinkle cutlets lightly with salt or pepper, if desired.
