Jean'S Vegetable Quiche - cooking recipe

Ingredients
    1 1/2 c. brown rice
    3/4 c. egg substitute
    1/4 c. skim milk
    1 Tbsp. low-fat margarine
    1 c. low-fat Mozzarella cheese
    1 c. mushrooms
    1 1/2 c. broccoli
    Pam spray
Preparation
    Prepare brown rice as directed on package.
    Allow to become room temperature.
    Mix rice, margarine, 1/4 cup of egg substitute and 1/2 of cheese.
    Spray a 9 1/2 x 11-inch dish well with Pam. Press into dish.
