Cheese Cake(Crostata) - cooking recipe

Ingredients
    3 lb. Ricotta cheese
    2 c. sugar
    8 egg yolks
    1/2 c. flour
    1 lemon rind, grated
    1 tsp. lemon extract
    8 egg whites
    1/2 c. heavy cream, whipped
    1 c. graham cracker crumbs
Preparation
    Preheat
    oven
    to
    425\u00b0.
    Drain Ricotta cheese and beat until smooth.
    Slowly
    add
    1
    1/2
    cups sugar and egg yolks, beating after
    each
    addition.
    Beat in flour, lemon rind and lemon extract.
    Beat
    egg
    whites
    with remaining sugar until stiff. Blend
    with
    whipped
    cream and fold in Ricotta cheese mixture. Butter
    heavily a 12-inch spring-form pan and sprinkle
    with graham
    cracker crumbs.
    Pour filling into prepared pan
    and
    bake for 10 minutes.
    Lower temperature to 350\u00b0 and bake
    1
    hour. Turn off heat and allow to cool in oven.
    Keep refrigerated.
