Skillet Beef Pilaf - cooking recipe

Ingredients
    1 small onion, minced
    1 small green pepper, chopped
    1 Tbsp. oil
    1/2 lb. ground beef
    1/2 tsp. salt
    1/4 tsp. pepper
    1 c. uncooked rice
    2 1/2 c. hot beef broth
    grated Parmesan cheese
Preparation
    In a deep 9 or 10-inch skillet, saute the onion and green pepper in oil until tender. Add beef and cook, breaking up with a spoon, until the meat loses red color. Season with salt and pepper. Add rice. Cook and stir until rice looks translucent, but not brown (3 to 4 minutes). Add 1/2 cup broth. Cook and stir until broth is absorbed.
    Add remaining 2 cups broth. Cover and simmer until rice is tender and liquid absorbed, about 20 minutes. Top with Parmesan cheese.
