Pecan Goodies - cooking recipe

Ingredients
    egg whites (2 large eggs)
    1/2 c. light brown sugar, firmly packed
    1 tsp. vanilla extract
    2 c. coarsely chopped pecans (about 8 oz.)
    1 Tbsp. each unsweetened cocoa powder and confectioners sugar
Preparation
    Heat oven to 250\u00b0.
    Lightly grease large cookie sheet.
    In medium-size bowl with electric mixer at high speed, beat egg whites until soft peaks form.
    Gradually beat in brown sugar until mixture is stiff and glossy.
    Beat in vanilla extract; gently but thoroughly fold in pecans.
    Drop mixture by heaping teaspoonfuls onto prepared cookie sheet.
    Bake 1 hour, until outsides of candies are dry and set.
    Remove to wire racks to cool.
    If desired, dust candies lightly with mixture of cocoa powder and confectioners sugar.
    Store in tightly covered containers in cool dry place up to 2 weeks.
    Makes about 5 dozen candies.
