Green Tomato Pie Filling - cooking recipe
Ingredients

6 lb. green tomatoes, peeled and sliced thin (measure after slicing)
1/2 c. vinegar
1/2 c. water
4 1/2 c. granulated sugar
1 tsp. salt
2 tsp. cinnamon
Preparation

Cook first 3 ingredients until almost tender.
Add the mixed dry ingredients.
Boil hard for 5 minutes.
Place in glass jars and seal immediately.
Before pouring into unbaked pie crust, heat and stir in a cornstarch thickening and add 1 tablespoon butter. A few raisins may be added, if desired.
Bake 3/4 hour in moderate oven.
