Oatmeal Crispy Ice-Cream Sandwiches - cooking recipe

Ingredients
    1 c. shortening
    1 c. packed brown sugar
    1 c. sugar
    2 eggs
    1 tsp. vanilla
    1 1/2 c. flour
    1 tsp. baking soda
    3 c. quick cooking oats (uncooked)
    1/2 c. chopped pecans
    1 (1/2 gal.) carton chocolate or vanilla ice cream
Preparation
    Use electric mixer at medium speed and beat shortening until fluffy.
    Add sugars and beat well.
    Add eggs and vanilla.
    Mix well.
    Combine flour, soda and oats.
    Add to shortening mixture. Mix well and then stir in pecans.
    Cover and chill 1 hour.
    Shape dough into 38 balls and place 3-inches apart on lightly greased cookie sheet.
    Dip flat-bottomed glass in flour and flatten each ball into a 2 1/2-inch circle.
    Bake at 350\u00b0 for 12 to 14 minutes. Remove to wire rack and cool.
