Oatmeal Muffins - cooking recipe

Ingredients
    1 c. quick-cooking oats (uncooked)
    1 c. buttermilk
    1 egg, beaten
    1/2 c. firmly packed brown sugar
    1/2 c. vegetable oil
    1 c. all-purpose flour
    1/2 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt
    1/2 c. raisins (optional)
Preparation
    Combine oats and buttermilk in a large bowl.
    Let stand one hour.
    Add egg, sugar and oil, stirring well.
    Combine remaining ingredients, except raisins, in a medium bowl.
    Add to oats mixture, stirring just until moistened.
    Stir in raisins.
    Spoon into greased muffin pans, filing 3/4 full.
    Bake at 400\u00b0 for about 18 minutes.
    Yield: 18 muffins.
