Shrimp-Crab Gumbo - cooking recipe
Ingredients

2 Tbsp. margarine
1 small onion, chopped
1/2 lb. okra, washed (discard stem ends) and sliced (saute in margarine to keep from getting slimy)
1 (15 oz.) can tomatoes (no salt added)
1 c. water
1/8 tsp. pepper
1 tsp. salt (Adolph's salt substitute)
1/8 tsp. thyme
1 tsp. chopped parsley
1/2 bay leaf, crushed
1/2 to 1 lb. fresh crab and shell (or can use imitation crab meat)
1 lb. fresh shrimp, shelled, deveined and cooked
2 1/2 tsp. gumbo file
Preparation

Heat the margarine in a large skillet.
Add the onion and okra.
Cook mixture until onion is soft.
Add tomatoes and spices to the skillet.
Mix well. Cover and simmer 15 minutes.
Stir in shrimp and crab meat and cook 10 minutes.
Serve over rice or cornbread.
Serves 6 to 8.
