Broccoli Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    3 tsp. flour
    1/2 tsp. pepper
    1 1/4 to 1 1/2 lb. broccoli
    1 c. milk or half and half
    1 medium onion, chopped
    1/2 tsp. salt
    1 1/2 c. chicken broth or 2 bouillon cubes, dissolved
    grated cheese
Preparation
    Rinse
    broccoli.
    Trim stem ends.
    Remove flowerets and steam for
    15
    minutes.
    (Can microwave for 8 minutes on High and
    let stand for 4 minutes, until broccoli is fork tender.) Set
    broccoli aside.
    In
    a
    large saucepan, melt butter over medium heat.
    Add onion and saute until transparent.\tBlend in flour,
    salt
    and pepper.
    Stir
    constantly, about 2 minutes. Gradually add broth, then broccoli; stir frequently.
    Transfer mixture
    to
    blender
    or food processor in batches and pureed. Then\treturn\tto saucepan and add milk or cream.
    Heat through until\twarm.
    Serve sprinkled with grated cheese.
    Serves 4 to 6.
