Katie'S Black Bean Soup - cooking recipe

Ingredients
    1 lb. black beans
    3 to 4 Tbsp. oil
    garlic
    1 onion
    oregano
    basil
Preparation
    Soak beans in sufficient water to cover by 2 to 3-inches overnight.
    Drain beans and save water.
    Saute soaked beans in oil for 10 to 15 minutes.
    Add water from soak and bring to a boil. Reduce heat, cover and simmer for 3 to 4 hours, until tender and broth is thickened and dark.
    Add onion, garlic and herbs during first hour of cooking.
    Serve with lemon, sour cream and dark bread.
