Eggplant Casserole - cooking recipe
Ingredients

1 eggplant
1/2 c. water
1/4 c. melted margarine
1/2 c. soft bread crumbs
3 eggs, beaten
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. onion, minced
Preparation

Cut eggplant into chunks (skin on).
Cook eggplant in water until tender.
Drain.
Add melted margarine, bread crumbs, eggs and seasonings.
Pour into greased casserole.
May sprinkle top with additional bread crumbs.
Bake, uncovered, at 350\u00b0 for 20 to 25 minutes.
Serves 4 to 6.
