Rice Balls - cooking recipe

Ingredients
    5 c. cooked rice
    1/2 small Mozzarella
    6 eggs, separate yolks from whites
    1 c. bread crumbs
    1/4 tsp. pepper
    1/2 c. grated Romano cheese
Preparation
    Cook rice.
    Drain well at least 1 hour.
    Mix grated cheese, pepper and egg yolks with rice until sticky.
    Set aside.
    Cube Mozzarella.
    Make a rice patty, place Mozzarella cube in center and place another rice patty on top.
    Shape into a ball.
    Beat egg whites.
    Roll ball first in egg whites then in bread crumbs.
    Set balls for 2 hours.
    Fry in very hot oil.
    Drain and serve hot.
