Shrimp And Vegetable Scampi - cooking recipe

Ingredients
    1 lb. large shrimp, peeled and deveined
    1 large red bell pepper, cut into chunks (1 1/2 c.)
    2 c. zucchini, cut in 2-inch sticks
    1 Tbsp. water
    4 Tbsp. Scampi Butter (see recipe in this book)
Preparation
    Pat shrimp dry and set aside.
    Place bell pepper in center of a 12-inch microwaveable plate.
    Arrange zucchini in an even layer around pepper.
    Sprinkle pepper with water and cover with vented plastic wrap.
    Microwave on high 5 to 6 minutes or until slightly softened.
