Ingredients

6 potatoes, peeled and grated
1 onion, grated
2 eggs, beaten
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. flour (more or less)
Preparation

Mix all ingredients well.
Heat peanut oil to lightly cover bottom of skillet on medium heat.
Drop by spoonfuls and flatten with a spatula.
Brown on both sides.
