Carrot Cake - cooking recipe

Ingredients
    3 eggs
    1 tsp. vanilla extract
    1 3/4 c. sugar
    1 c. vegetable oil
    1 (8 oz.) can crushed pineapple, drain (reserve juice for frosting)
    2 c. flour
    2 tsp. baking soda
    1 tsp. baking powder
    1 tsp. salt
    2 tsp. cinnamon
    2 c. carrots, shredded
    1 c. raisins
    1 c. shredded coconut
    1 c. nuts, chopped
Preparation
    Preheat oven to 350\u00b0.
    In a large bowl, beat the eggs. Add vanilla and gradually add sugar until well blended. Add oil and drained pineapple (reserve juice for frosting). Gradually add the remaining ingredients one at a time, blending well after each addition.
    Pour cake mixture into Bundt pan that has been sprayed with Pam. Bake for 35 to 45 minutes or until toothpick inserted comes out clean. Place on a wire rack to cool.
