Baked Barley - cooking recipe

Ingredients
    1 onion, diced
    1 c. barley
    5 Tbsp. oil
    1/2 lb. mushrooms, sliced
    salt to taste
    2 1/2 c. boiling vegetable or chicken broth
Preparation
    Preheat oven to 350\u00b0.
    Saute onions, mushrooms and barley in oil.
    Stir frequently until barley is lightly browned.
    Place in casserole and stir in broth.
    Cover and bake for 1 hour.
    Serves 4 to 6.
