Mildred Welch'S Famous Mincemeat - cooking recipe

Ingredients
    3 lb. lean beef, ground fine
    1 lb. suet, ground
    5 lb. apples, chopped fine
    3 lb. seedless raisins
    3 boxes currants
    1 large orange, grind all but seeds
    1 Tbsp. salt
    2 1/2 lb. sugar
    2 Tbsp. cinnamon
    1 Tbsp. nutmeg
    1 1/2 c. vinegar
    1 tsp. pepper
Preparation
    Boil beef until tender; drain and grind.
    When cool, use broth to cook ingredients.
    Mix and add salt, sugar, cinnamon, nutmeg, vinegar and pepper.
    Mix and cook 1 hour.
    Peel apples and dice while beef is cooking and put the sugar on it and keep stirred.
    It makes more natural juice.
    Makes 16 pints.
    Seal and can.
